Olive oil is the juice extracted from ripe olives six to eight months and is without a doubt our liquid gold, the main ingredient of the Mediterranean diet.

Differences between virgin olive oil and extra virgin
The quality difference is basically caused by being the first and the second extracted. Both are obtained by the first extraction methods will always be refined mechanical but never to wear. The extra virgin is the first extraction, therefore the highest quality.
The second to be extracted is the virgin, somewhat lower in quality and purity but excellent anyway.
We also have the third variation, which is the dry olive oil, which does not contain the designation of origin virgin. It is because it is a blend of refined olive oil and virgin olive oil. It is the lowest quality and here the difference is noticeable widely. But still good for our health and our kitchen.
